Fifteen: pudding

Courtesy of Simone Walsh

I don’t like Christmas pudding. So sue me. They’re tiny and dry and you get sick of the taste within 0.894 seconds. I thought instead I would share my favourite alternative.

Since mince pies are a snack rather than pudding in themselves, I’ve chosen Christmas baked apple. (My mince pie count is now at thirty-three.)

  • Preheat oven to 190°C.
  • Core out a baking apple with a knife.
  • Fill with raisins/sultanas/currents.
  • Place on baking tray and leave in oven for 20-30 minutes until it’s soft on the inside…voila!

Possibly the easiest ‘recipe’ imaginable, and it tastes amazing, especially with cream!
